This is the basic “recipe” of this elegant Amarone della Valpolicella DOCG. The grapes, harvested by hand when fully ripe, come from selected vineyards in the hilly area of the appellation, between 150 and 300 meters above sea level. After harvesting, the grapes are placed in ventilated rooms for the slow drying process which lasts at least until December. At that point, when the berries have now lost most of their water and the aromas have concentrated, we move on to the actual vinification phase followed by long aging in French and American oak barrels for several months. The result is a wine characterized by intense red color, with evident garnet nuances due to slow aging. The nose is complex, with notes of red and black fruit, such as plum and cherry. There is no lack of light spicy and balsamic notes and even a slight hint of bitter chocolate. In the mouth, it is broad and gratifying. Equipped with a remarkable structure, it enjoys a perfect balance between all its components. A decidedly enjoyable Amarone, even at the table. The important thing is that the combination is chosen with care. A wine like this requires strong and intense flavors.
